MOLLER BAR & KITCHEN
A TASK WITH PEOPLE THAT DESERVES OUR DEEPEST RESPECT.
SOCIAL DINING, COCKTAILS & BEERS
The concept at Møller Bar & Kitchen is social dining.
We hope to give our guest a cosy and casual evening when visiting the restaurant, and therefore the food is served on large plates and bowls instead of individual servings.
The idea is that the guests share the food. In that way, the whole table can experience the many delicious tastes that you find on our menu, and the restaurant experience will be more social.
Every month we change the dishes on the menu, so it reflects on vegetables that are in season. The dishes are always made of the season’s fresh vegetables and high-quality meat.
At Moller Bar & Kitchen we love tasty cocktails and great beers, which is why you will find a large selection of drinks on tap from To Øl as well as signature cocktails from the bar.
Do you prefer a good beer? Our menu also offers a large selection of different beers such as IPA, Stout etc.

CHECK OUT THE CASE AND HOW WE SOLVED IT BELOW
Moller Kaffe & Kitchen was acquired in 2019 by succesful café-company Mad & Kaffe (Food and Coffee).
Upon learning about their new investment it was evident that they needed improvement.
Moller Kaffe & Kitchen, being a lunch-restaurant, had a huge potential to provide the same quality experience in the evening.
As a result of their always fully booked lunches, the owners wanted to add extra features to attract dining guests.
With their experimental kitchen, a fundamental challenge to ally that with cocktails was looming and gave us something to think about.
It needed a close dialogue and teamwork with the the chef and the restaurant manager.
It was clearly stipulated that the cocktails was delicious, easy to make, low-cost priced and fitted the food menu.
In addition to that, they needed to be easy to prepare.
It’s a challenge in itself and interesting to make everything that normally is somehow impossible – not impossible.
A small detail about Moller was that their bar space is super limited and barely have space for pouring beer, wine and water while producing smoothies and juices.
However, that logistic proved to be the key to how we should organise the cocktails.
First and foremost it was important not to compromise.
Just because they have space limitations as compared to a normal cocktailbar and it had to be a simple production proces.
When Moller actually have a pretty large kitchen area we were able to utilise that for a large prep, as a result.
We made a very precise and thorough batch-program.
After the owners approved the cocktails.
We went to lead the team through the programme and how they should plan and pre-mix the cocktails in 75 cl bottles and subsequently register the usage in the POS-system.
With that system a relatively unexperienced bartender would be able to produce and make cocktails 1/4 of the normal speed as opposed to picking each ingredients individually.
Our approach was then moved to training the staff to keep everything clean, neat and tidy and to implement proper communication with the floor team and the kitchen.
After 2 test-dinners.
All we can say is no guest had to wait for their drinks and had absolutely no problem emptying their glasses.
